Our Story

Snacky Nuts began in a single kitchen in Ujjain, on the banks of the Shipra — a city that has fed pilgrims for two thousand years and has opinions about how a thing should taste.

We buy fox nuts by grade, not by weight. We roast in ghee because oil flattens the spice. And we keep the batches small enough that someone is always listening to the drum.

    Hand-selected

    Fox nuts are graded by hand for size and colour. Only the largest, whitest pops make the cut — roughly a third of what arrives.

  2. 02

    Roasted in desi ghee

    Air-roasted, never deep-fried, then finished in pure desi ghee. It is the ghee that carries the spice into the nut.

  3. 03

    Small batches

    Twelve kilos at a time. Small enough that one person can hear when the drum sounds right and pull it early.

  4. 04

    Sealed the same day

    Nitrogen-flushed and resealed within hours of roasting, so the fourth handful is as crisp as the first.

It starts underwater

Fox nuts are the seed of the prickly water lily, harvested by hand from ponds in Bihar and eastern India. Divers bring the pods up from the silt; the seeds are washed, dried in the sun, and graded by size before anyone thinks about heat.

Then it pops

Tempered seeds are heated until the starch inside flashes and bursts the shell — the same physics as popcorn, at a fraction of the speed. What blooms out is white, light, and almost entirely air.

The numbers hold up

Makhana — fox nut, or phool makhana — is the popped seed of the prickly water lily, harvested from ponds in eastern India. The seeds are dried, tempered and popped with heat until they bloom into a light white puff.
